Produced from an organically-farmed vineyard (La Mendoza) in the Pago Cerro Pelado, in the NW corner of Jerez. The two most prominent subtypes of Albariza are found here: Tosca Cerrada and Barajuelas. La Mendoza vineyard was planted in the 1960s and contains 8 or 9 heritage clones of Palomino. This is particularly noteworthy as 98% of the Marco de Jerez was re-grafted to the productive Californiano clone of Palomino between 1973 and 1980.
Joaquín Gómez Beser makes Meridiano Perdido wines in a cortijo (farm) a couple kilometers from the vineyard. Fermentation occurs in 500L French barrels and 100+ year-old ex-Fino butts. Flor is a function of vintage. Joaquín encourages more flor in warmer vintages because the glycerin consumption of flor gives wines a fresher feel, this helps impart linearity in wines without the common practice of acidification (which the winery does not do).
