4th generation steward of the family estate in Moulin-à-Vent, Elisa crafts joyous, layered, and harmonious wines from hand-harvested, organically farmed vineyards. Fermentations occur naturally with semi-carbonic maceration of whole clusters in concrete tanks. Nothing but minimal sulfites are added at any point during the process and wines remain unfined and unfiltered. Sulfur use is kept to 10ppm at racking and 5ppm at bottling.
