Domaine Sérafin, established in 1947, produces wines from very old vines in Gevrey-Chambertin. Christian was making the wine since 1968, and officially took over from his father in 1988. One of the keys to the quality of these wines is Christian’s accruement of ideal parcels within the named Crus now owned by the family. In the last 15 years, Christian has slowly retired and left the domaine to the 3rd generation of Serafins –daughter Karine and niece Frédérique. The domaine has 6 hectares of vines, mostly in Gevrey-Chambertin, including 0.31 ha of Grand Cru, Charmes-Chambertin and 5 premier cru vineyards. The new generation remains loyal to the house style Christian established over decades. They make Vin de Garde, age-worthy wines from very low yields with an emphasis on balanced new oak with low toast. 100% destemmed grapes, fermented with the native yeast, are aged in a high percentage of new oak. The wines are left untouched in the barrel (no racking) until they are ready to be bottled, unfined and unfiltered.
