Julien Philppon first came to Fleys in 1868 as a wood cutter and over the years gradually purchased the vines that now make up the Domaine. It is therefore no surprise that the Domaine possesses some of the best vineyard sites in the village. The 15 Hectare Domaine is now in the youthful hands of Beatrice Philippon and her brother. The vineyard work is fastidious, the 1er Cru harvest is all by hand (relatively unusual in Chablis), and the general vinification completed without the use of oak barrels (except occasionally the 1er Cru), thus producing the purest expression of Chardonnay with delightful minerality from the Kimmergidian soil.
