At Broc Cellars, winemaker Chris Brockway works with many vineyard sites throughout California including Solano County, Mendocino County, Paso Robles, Madera County and more. Virtually any organically farmed variety can be found on his picking table. All wines are made using spontaneous fermentation, where only native yeasts and bacteria that exist on the grapes and in the environment are utilized to make wine. Nothing is added, such as nutrients, yeast, bacteria, enzymes, tannins or other popular fermentation agents. Since sulphur is a naturally occurring element in all wine, the amount found can vary but depending on the wine and style – little to no additional SO2 is added at bottling. In other words – at Broc Cellars the decision of what fruit to harvest and when to pick becomes the most important decision, any choices made thereafter are a minimal part of the resulting lively, fresh and energetic offerings.
