Located 15km off the coastline of Gipuzkoa – a small town in the Basque region of Spain within the D.O. GetariakoTxakolina. They own 7 hectares of vineyards planted mostly to the indigenous varieties of the region: Hondarrabi Zuri and Hondarrabi Beltza. Their site, however, lies in the heart of the Oria Valley with Mount Ernio as a backdrop which offers a uniquely exciting expression of Txakoli.

They are afforded a cooler microclimate, even in the face of the Atlantic, due to cloud coverage and condensation rolling in from Mount Ernio – so the decision was made early on to use the Trellis system to train the vines (something unusual in this PDO). This affords the grapes the maximum amount of sunshine to obtain better ripening. The sloped sites also provide good aeration and drainage allowing the winery to abstain from using any herbicides in their vineyards.

Their focus on preserving the beautiful quality of the fruit coming in from their vineyards continues in the winery as well. The entire winemaking process is designed to prevent oxidation of the must/wine as soon as it enters the winery, thus preserving its full aromatic potential. Thanks to the carbon recovery system (oresteo system) all the wines in the winery are aged on their own lees using the very carbon it has generated during the alcoholic fermentation phase. This also allows them to use the most minimal amount of sulfur during bottling.

As is clear, every decision made is about preserving the unique quality of the grapes grown in this distinct plot of land in Gipuzkoa, in the most sustainable way possible.
