Ayunta is a small, family-run winery on the northern slopes of Mount Etna, in the historic village of Randazzo. At 700 meters above sea level, the estate cultivates just under 3 hectares of old vines—some over a century old—focusing on indigenous Sicilian varieties like Nerello Mascalese, Nerello Cappuccio, Carricante, and Catarratto. Committed to organic and sustainable practices, Ayunta farms without chemicals, allowing the purity of the terroir to shine through.
In the cellar, Ayunta follows traditional, hands-off winemaking methods, including spontaneous fermentation in open-top concrete vats and aging in large neutral barrels. Unlike many wineries, Ayunta cellar-ages its wines and releases them only when they have reached their ideal expression, often much later than industry norms. The result is a collection of elegant, fresh, and mineral-driven wines that embody both the volcanic terroir and the unique character of each vintage.
