A collaboration between two winemaking legends, Antoine Graillot & Raúl Pérez, Encinas is a Mencía-dominant field blend made from organically farmed grapes chosen by both Antoine and Raúl from three different old-vine sites in the villages of Valtuille de Abajo and Otero in Bierzo. Whole-cluster fermentation in a massive concrete vat (so large it almost didn’t fit into Raúl’s winery – the roof had to be removed to allow a crane to drop the vat in), and aged in two neutral 2500L french-oak foudres for 10 months.
